Simple cheese omelette


INGREDIENTS
2 eggs
drop of milk
salt and freshly ground black pepper
1 tbsp butter
handful of grated cheese

METHOD
Crack the eggs into a bowl and lightly whisk with a drop of milk. Season with salt and pepper.
Heat a small frying pan over a medium heat until hot, then add the butter. Once the butter is melted and foaming, pour in the egg mixture. Pull the edges away from the side of the pan using a spatula or fork; keep doing this so that any uncooked mixture runs to the edge. After about 30 seconds, most of the egg should be set. It will still be soft in the middle, but residual heat
will continue cooking the omelette after it is taken out of the pan.
Sprinkle the cheese down the centre of the omelette, then fold one half of the omelette over the top of the other. Slide on to a plate, and serve immediately.
